Trained at Le Cordon Bleu, Rosas manages Rosas Farms, an all grass-fed beef organic cattle and poultry farm in Florida, and he owns several eco-friendly businesses, including an organic product procurement and specialty foods operation. His product consulting and studies have led to groundbreaking changes within the organic food industry, and he has been hired as a consultant for teaching culinary students.
Rosas has worked in kitchens at every level, from executive chef to food and beverage director. His model, known as Pragmatic Organics, has been used by chefs, culinary students, and even families nationwide. He wants people to enjoy organic foods by turning them into simple, fun recipes that are also delicious.
Rosas has received many honors and accolades, including “Culinary Entrepreneur of the Year” by Cordon D’Or, “Sustainable Florida Small Business Practices Award 2008,” “Distinguished Leader 2008” by Ocala magazine, “Walt Drigger’s Environmentalist of the Year 2007,” and the U.S. Chamber of Commerce’s “America’s Small Business 2008 Blue Ribbon” award.
Rosas published the cookbook The Organic Chef and has been a monthly columnist for the Ocala Business Journal. He is a member of the International Culinary Tourism Association and has volunteered for Farm Aid and Chefs for Humanity.
